$20 Challenge - Versatile Veggies

The $20 Challenge is back, this time with goodies from our Orenco Station Sunday market vendors. There were so many options, it was hard to choose!

On Sunday June 21, we purchased the following from our Orenco Station Market:

  • Asparagus - Pablo Munoz Farms, $4

  • Radishes - Reyes Family Produce, $2

  • Pint of Snap Peas - Black Dirt Farm, $4

  • Orach - Stoneboat Farm, $3

  • Pint of Blueberries - Crawford’s Produce, $3.75

  • Garlic & Shallot - Pitch & Plow Farms, $1

  • Total Purchase = $17.75

  • Total # of Recipes = 4 (plus eating most of the blueberries before we made the salad.)

Asparagus and Snap Pea Stir Fry

We love a good stir fry! It is so easy to take a good base recipe and adapt it to your own taste and what ingredients you have on hand. Asparagus is one of our favorite early summer veggies and it pairs perfectly with the snap peas (which we can’t get enough of right now!). We altered the recipe a bit and it hit the spot. We used half of our asparagus and snap peas to save them for more recipes (see below). We used a few of the radishes and added both garlic and shallot. To make a full meal, we added chicken and tossed the whole thing in a pot of noodles.

Snap Pea Salad

Snap peas are so versatile, we wanted to highlight a way to use them raw. Plus, anything that calls for mozzarella cheese works for us. It was a light, refreshing salad that was perfect for the beginning days of summer.

Asparagus & Blueberry Spinach Salad

If you are anything like us, this quarantine has us needing to eat more salads! There is something so appealing about topping greens with both fresh veggies and fruit - it’s healthy and a work of art. We were light on the blueberries for this salad, so we learned that recipes requiring fruit to still exist must be made earlier in the week. We’re weak, it’s okay.

Sauteed Orach

Orach is new to us, so we kept it simple to truly get to know it. Orach is also known as Red Mountain Spinach and can substitute spinach in many recipes. Our orach and garlic sautee was exactly what we needed to be on board with trying something new!
